Fall is my favorite season for many reasons. Football games, campfires and holiday baking. Life with a newborn baby doesn’t always allow for recipe-testing, grocery shopping and time in the kitchen, though. Ya don’t say, right? Therefore, I’ve been looking for the easiest recipes that also taste yummy. This 1-2-3- step Halloween cake mix cookie recipe is a winner. In fact, I made two batches of warm, gooey cookies while the baby was sleeping. This includes a million trips to the animal’s crib to put his pacifier back in and a 30-minute stationary bike ride to work off that Mom body. Er, or to earn my cookie-eating stripes?

Ingredients: Cake mix, eggs, vegetable oil and your favorite colored sprinkles.
Step (1): Use a mixer to combine the cake mix, vegetable oil, eggs and sprinkles. Lots and lots of sprinkles.
Step (2): More sprinkles. I wasn’t kidding when I said use a lot of sprinkles. Splurge a little.
Step (3): Roll the dough in to medium-sized balls. Place on a cookie sheet and bake for 8-10 minutes at 325 degrees. Let cool on a cooling rack for 15 minutes.
Halloween cake mix cookie recipe
Ingredients:
1 box of cake mix (Betty Crocker has some great flavors to choose from here)
1/2 cup of vegetable oil
2 extra large eggs
Sprinkles
Heat the oven to 325 degrees. Grease a cookie sheet.
In a medium bowl, mix the cake mix, vegetable oil, extra large eggs and sprinkles.
Use an ice cream scoop to form medium-sized balls. Roll the dough with the palms of your hands to form an even ball shape. Place on the cookie sheet and cook for 8-10 minutes. When you take the cookies out of the oven they are going to feel uncooked. Let cool on a cooking rack for 15 minutes.
